Born in Cádiz in the first century AD, the Roman agronomist Lucius Moderatus Columella, a great connoisseur of the olive tree and olive oil, notes in his reference work on agriculture in Roman times: "For the manufacture of oil, the hanging millstones provide the best execution because, depending on the size of the olives, they can be lowered or raised so that the stone does not break, which spoils the taste of the oil." Cuadrat wanted to revive this thousand-year-old tradition of pitted olive oil, with a more intense fruitiness and a more powerful green color. Recent studies show that destoning improves the organoleptic and nutritional quality of olive oil. It is thus more resistant to the auto-oxidation phenomenon observed in oils obtained from hammer mills.
